This was added in build 2036.
It's worth noting that it won't be visible for unregistered users on OS X, however.

Better to show it in the title. For example: "ST2 - Proj1 (UNREGISTERED)".
As of 2034 the project name is being displayed in the title bar.
But it behaves kind of strange on OSX:
1. Open new window.
2. Load project.
3. Project name is being displayed.
4. Switch to fullscreen mode.
5. Project name is not being displayed.
6. Switch tab.
7. Project name is being displayed.
8. Quit fullscreen mode.
9. Project name is not being displayed.
10. Switching tabs or focus doesn't help.
11. Switch to fullscreen mode.
12. Project name is not being displayed.
13. Quit fullscreen mode.
14. Project name is being displayed.

This may have been added in build 2036, but it's been added in a way that (on OSX, at least) it isn't actually useful.
The issue isn't just having the name of the project displayed on the title bar -- it's having the name of the project available when the project is minimized. OSX uses the window title to describe the window when it is minimized. When you don't have a file open, it displays "Sublime Text 2". If you have a file open, it displays the name of that file.
So, if you have 5 projects open, and each of those projects have the current file as "setup.py", and the 5 windows are minimized, you can't tell the windows apart.
Therefore, the name of the current project needs to be included in the actual titlebar text, not shunted off into some side area. Honestly, if a saved project is open, I wouldn't even mind if the name of the current file wasn't in the titlebar text at all -- after all, the currently open file is displayed quite clearly in the tab bar.

"isn't actually useful" is overstating the situation, but you're absolutely correct about the current presentation not working well with minimised windows and exposé. I'll change it for the next version so the project name is included in the regular title text.
This seems to have been fixed now as the project name appears in the title bar.

I would love to see not just the project name, but rather the top-level 'Folder' name ala Textmate. eg:
index.php - mysite_dev
If you have multiple files with the same name, it is currently impossible to tell them apart without hovering on the filename in the 'Files' list
As of Build 2091, this has regressed on OSX; an open project that has no open files doesn't display the project name in the titlebar, and doesn't display the project name in the hover text. In both cases, "Sublime text 2" is the text displayed; which means if you have multiple ST2 minimized, you can't tell them apart.
Exactly as rhuk said below:
When not using projects, could we have the top level folder displayed in the title as it does in TextMate. eg:
index.html.erb - myrailsapp
Thanks!

I'm still waiting for the project name (or the root directory name) to be the first thing in the window title, so it's useful on minimised windows. Is this going to be implemented?
Thanks v much!

My problem too. I just start using Ubuntu and hope to see in Sublime customization of windows title. Now for all my projects i see exactly same "~/Applications/Projects/"
